- spinach 2 handfuls
- bell pepper 1 medium
- lentils ½ package
- sun-dried tomatoes 2 Tbsp
- parsley 2 Tbsp
- balsamic glaze 2 Tbsp
- brown rice 1 pouch

1Add red onion to a large skillet on medium heat then stir in olive oil and garlic . Add spinach and bell pepper and cook until spinach begins to wilt.

2Empty half the package of lentils into the mix and then add sun-dried tomatoes . Heat and stir another 2 minutes and then mix in the parsley and balsamic glaze .

3Divide brown rice onto individual plates and ladle sauté over each serving. 28 minutes
