Balsamic Lentil Sauté

🥘 Ingredients

  • red onion ½ medium
  • olive oil 1 Tbsp
  • garlic 2 cloves
  • spinach 2 handfuls
  • bell pepper 1 medium
  • lentils ½ package
  • sun-dried tomatoes 2 Tbsp
  • parsley 2 Tbsp
  • balsamic glaze 2 Tbsp
  • brown rice 1 pouch

🍳 Cookware

  • large skillet
  • plates
  • ladle

    Add red onion to a large skillet on medium heat then stir in olive oil and garlic . Add spinach and bell pepper and cook until spinach begins to wilt.

    Empty half the package of lentils into the mix and then add sun-dried tomatoes . Heat and stir another 2 minutes and then mix in the parsley and balsamic glaze .

    Divide brown rice onto individual plates and ladle sauté over each serving. 28 minutes
