Truffle paper
"paper" made from French mustard and truffle potatoes

- truffle potatoes 130 gram
- egg whites 60 gram
- French mustard 7 gram
- salt

- potato masher
- sieve
- baking mat

1Preheat the oven to 100C.

2Cook truffle potatoes and mash them gently with a potato masher .

3Cool down the mash potato.

4Stir the egg whites and mix them with the mash potato.

5Stir in the French mustard and add salt to taste.

6Pass the mixture through a sieve .

7Smear the mash potato on a baking mat and let it dry for 1 hour in the oven .
