Apple gel
Sweet gel made from green apples
π₯ Ingredients
- water 150 gram
- sugar 150 gram
- star anise 2
- apple coulis 175 gram
- agar agar 8 gram
- gellan gum 6 gram

- blender
- fridge

1Bring water and sugar to a boil until the sugar is fully dissolved.

2Add star anise and let it infuse for 30 minutes on very low heat.

3Pass the syrup through a metal sieve .

4Mix 250 grams of the syrup with the apple coulis , agar agar and gellan gum and bring to a boil.

5Pour into a container and let it firm up.

6When fully firm, mix it into a gel in the blender .

7Keep in the fridge .
