Tomato tartare
vegetarian tartare with Italian tomatoes
π₯ Ingredients
- Italian tomatoes 8
- pickles 3
- banana shallots 2
- parsley 0.33 bundle
- capers 1 tbsp
- Worchester sauce 1 tbsp
- tabasco
- seasalt
- black pepper
- French mustard 1 tbsp
- tomato ketchup 1 tbsp
- olives 5
- extra vierge olive oil 50 gram
- aged farmhouse cheese 100 gram

1// tomato tartare Skin the Italian tomatoes .

2Cut them into 4 pieces and remove the seeds.

3Cut the flesh of the tomatoes into small even pieces (brunoise).

4Cut the pickles into eqaully small pieces (brunoise).

5Finely chop the banana shallots .

6Chop the parsley leaves.

7Rinse the capers in cold water and drain.

8Mix the tomatoes, parsley, shallots, and capers in a bowl.

9Season to taste with Worchester sauce , tabasco , seasalt and black pepper .

10Add the French mustard and tomato ketchup and mix well.

11// garnish Finely chop the olives and mix with the extra vierge olive oil and use as garnish for the tartare.

12Garnish with grated aged farmhouse cheese .
