  • Italian tomatoes 8
  • pickles 3
  • banana shallots 2
  • parsley 0.33 bundle
  • capers 1 tbsp
  • Worchester sauce 1 tbsp
  • tabasco
  • seasalt
  • black pepper
  • French mustard 1 tbsp
  • tomato ketchup 1 tbsp
  • olives 5
  • extra vierge olive oil 50 gram
  • aged farmhouse cheese 100 gram

    // tomato tartare Skin the Italian tomatoes .

    Cut them into 4 pieces and remove the seeds.
  3. 3
    Cut the flesh of the tomatoes into small even pieces (brunoise).

    Cut the pickles into eqaully small pieces (brunoise).

    Finely chop the banana shallots .

    Chop the parsley leaves.

    Rinse the capers in cold water and drain.

    Mix the tomatoes, parsley, shallots, and capers in a bowl.

    Season to taste with Worchester sauce , tabasco , seasalt and black pepper .

    Add the French mustard and tomato ketchup and mix well.
