🥘 Ingredients
- olive oil 1 tbsp
- onion ½
- mashed potatoes 3.3 cups
- spinach 3 cups
- eggs 2
- flour 3 tbsp
- baking powder 1 tsp
- olive oil 2 tbsp
- salt
- pepper
- freshly grated Parmesan
🍳 Cookware
- large sauté pan
- mixing bowl

1Heat large sauté pan over medium with olive oil .

2Sauté onion until softened.

3Add mashed potatoes and cook until they warm and loosen.

4Add spinach and stir until wilted.

5Transfer mixture to a mixing bowl , and stir in eggs , flour , and baking powder .

6Wipe clean the sauté pan and heat olive oil over medium-high heat.

7Working in small batches, drop in rough tablespoons of the mashed potato mixture, cooking each side for 2 minutes or until golden. You may need to add more olive oil as you go.

8Serve immediately, while still warm.

9Sprinkled with salt and pepper to taste, as well as freshly grated Parmesan if desired.
