mediterranean tofu with tahini pasta
🥘 Ingredients
- pasta
- tofu 1 block
- olive oil 3 tbsp
- minced garlic cloves 3
- veg bouillon powder 1 tbsp
- red wine vinegar 1 tbsp
- dried thyme 1 tsp
- dried oregano 1 tsp
- salt ¼ tsp
- black pepper ¼ tsp
- tahini 3 tbsp
- lemon juice ½ lemon
- nutritional yeast 2 tbsp
- pasta water ½ cups
- oil
- onions ½
- garlic cloves 2
- sage leaves
- salt
- pepper

1Cook the pasta .

2Crumble the tofu into a bowl with olive oil , minced garlic cloves , veg bouillon powder , red wine vinegar , dried thyme , dried oregano , salt and black pepper and mix well.

3Heat up a pan on medium heat and add the tofu. Cook until they are golden brown. Remove and set aside.

4In a blender add tahini , lemon juice , nutritional yeast and pasta water then blend until smooth. Use more pasta water if too thick.

5Heat up the pan on medium heat, add oil then onions , garlic cloves , and sage leaves .

6Once cooked down add the sauce, then salt and pepper to taste.

7Add the pasta and mix. Serve up with the tofu and enjoy!
