- licorice powder 2 tbsp
- salmiak 1 tsp
- ice cream stabilizer 1 Β½ g
- heavy cream 400 g
- milk 280 g
- egg yolks 2

1Brown non-fat milk powder in a saucepan until golden. Stir continuously to prevent burning.

2In a bowl , combine dry ingredients: sugar , licorice powder , salmiak , ice cream stabilizer , and the browned milk powder.

3Combine heavy cream (36%), milk (3%) and the dry ingredient mixture in a saucepan . Heat to 85Β°C, stirring constantly.

4Let the mixture cool slightly, then gently whisk in egg yolks .

5Allow the mixture to cool completely and let it rest.

6Pour into an ice cream maker and churn.
