Fluffy Pancakes

- flour 300 g
- baking powder 20 g
- vanilla powder 20 g
- sugar 75 g
- eggs 2
- plant-based milk 275 g
- vegetable oil 30 g

- electric whisk

1Mix flour , baking powder , vanilla powder , sugar in a large bowl .

2Separate eggs into yolks and whites using separate bowls .

3Whisk the egg whites using an electric whisk until stiff peaks form.

4In the bowl with the egg yolks, add plant-based milk and vegetable oil , and mix together.

5Add the wet ingredients to the dry ingredients and mix until just combined.

6Let the batter rest for 30 minutes .

7Just before cooking, gently fold the whisked egg whites into the batter.
