Sausage and Root Vegetable Traybake

  • carrots 3 large
  • parsnips 3
  • sweet potato 1 large
  • red onion 1
  • olive oil 2 tbsp
  • thyme 1 tsp
  • salt
  • black pepper
  • pork sausages 8
  • cherry tomatoes 200 g
  • bay leaves 2
  • balsamic vinegar 1 tbsp

    Preheat the oven to 200Β°C (180Β°C fan).

    Cut carrots and parsnips into batons. Cut sweet potato and red onion into wedges.

    Place vegetables on a large baking tray . Drizzle with olive oil and season with thyme , salt , and black pepper .

    Roast for 20 minutes .

    Meanwhile, prick pork sausages with a fork.

    Remove tray from oven, turn vegetables, and nestle sausages among them.

    Add cherry tomatoes and bay leaves .

    Return to oven for 25 minutes , turning sausages halfway through, until everything is golden and cooked through.

    Drizzle with balsamic vinegar before serving.
