1Preheat the oven to 200Β°C (180Β°C fan).

2Cut carrots and parsnips into batons. Cut sweet potato and red onion into wedges.

3Place vegetables on a large baking tray . Drizzle with olive oil and season with thyme , salt , and black pepper .

4Roast for 20 minutes .

5Meanwhile, prick pork sausages with a fork.

6Remove tray from oven, turn vegetables, and nestle sausages among them.

7Add cherry tomatoes and bay leaves .

8Return to oven for 25 minutes , turning sausages halfway through, until everything is golden and cooked through.

9Drizzle with balsamic vinegar before serving.
