- olive oil 50 ml
- onions 2
- sweet peppers 2
- garlic 5-6 cloves
- Spanish Spice Mix 1 tbsp
- tomatoes 2
- potatoes 1 kg
- wine vinegar 2 tbsp
- water 1 liter
- salt

1Heat olive oil in a thick-bottomed saucepan at medium temperature. Add onions , cut into crescents and sweet peppers cut into strips and cook for about 15 minutes .

2Add chopped garlic and cook for another 2-3 minutes .

3Add Spanish Spice Mix and diced or grated tomatoes . Mix well.

4Cut potatoes into large cubes and add them to the pan.

5Pour wine vinegar and water (or broth for a more intense taste)

6Add salt to taste.

7Bring to the boil and cook for about 25 minutes or until the potatoes are fully cooked.
