Salmon and Asparagus Traybake

  • baby potatoes 600 g
  • olive oil 2 tbsp
  • salt
  • black pepper
  • asparagus 400 g
  • lemon 1
  • salmon fillets 4
  • dill 1 tsp
  • salt
  • black pepper
  • butter 20 g
  • sour cream 4 tbsp
  • dill 1 tbsp
  • lemon juice 1 tsp

    Preheat the oven to 200Β°C (180Β°C fan).

    Cut baby potatoes in half and place on a baking tray . Drizzle with olive oil , salt , and black pepper .

    Roast for 15 minutes .

    Meanwhile, trim asparagus and cut lemon into slices.
  5. 5
    Remove tray from oven. Push potatoes to one side and add asparagus.
  6. 6
    Place salmon fillets on top of vegetables. Season with dill , salt , and black pepper .

    Top each salmon fillet with lemon slices and dot with butter .

    Return to oven for 10 minutes until salmon is cooked through and flakes easily.

    Serve with a dollop of sour cream mixed with fresh dill and lemon juice .
