- lamb leg 600 g
- sweet potatoes 500 g, cubed
- red onion 1 sliced
- bell peppers 2 chopped
- olive oil 3 tbsp
- ground cinnamon 1 tsp
- ground cumin 1 tsp
- ground coriander 1 tsp
- paprika 1 tsp
- garlic 3 cloves, minced
- salt
- black pepper
- dried apricots 100 g
- tinned chopped tomatoes 400 g
- fresh coriander 2 tbsp
- couscous

1Preheat oven to 200Β°C.

2Cut lamb leg into chunks and place in a large roasting tin .

3Add sweet potatoes , red onion , and bell peppers .

4In a small bowl , mix olive oil , ground cinnamon , ground cumin , ground coriander , paprika , garlic , salt , and black pepper .

5Pour spice mixture over lamb and vegetables, toss to coat well.

6Add dried apricots and tinned chopped tomatoes .

7Bake for 40-45 minutes until lamb is tender and vegetables are caramelized.

8Sprinkle with fresh coriander and serve with couscous or rice .
