- red onion 1 large
- cherry tomatoes 250 g
- garlic 4 cloves
- black olives 100 g
- olive oil 3 tbsp
- dried oregano 2 tsp
- salt
- black pepper
- feta cheese 200 g
- basil leaves

1Preheat the oven to 200Β°C (180Β°C fan).

2Cut bell peppers into chunks, courgettes into thick slices, and red onion into wedges. Quarter cherry tomatoes .

3Place all vegetables on a large baking tray . Add garlic (crushed) and black olives .

4Drizzle with olive oil and sprinkle with dried oregano , salt , and black pepper .

5Roast for 30 minutes , then crumble feta cheese over the vegetables.

6Return to oven for another 15 minutes until vegetables are golden and cheese is slightly browned.

7Garnish with fresh basil leaves before serving.
