🥘 Ingredients
- avocado ½
- king prawns 100 g
- oil
- salt
- thyme 0.2 tsp
- rosemary 0.2 tsp
- garlic 1 glove
- rocket salad leaves 20 g
- lime 30 g
- olive oil

1Cut the avocado in half, remove the stone and carefully peel off the skin. Cut the avocado into slices. A little lemon juice will prevent it going brown if necessary.

2Peel the king prawns , heat a frying pan over a medium heat with a little oil and sauté the prawns with the salt , thyme , rosemary and chopped garlic . Should you like chilli you can finely chop one chilli and add to the prawns.

3Arrange the avocado on a plate, top with the rocket salad leaves , place the prawns on the rocket salad and drizzle with lime juice and olive oil . This salad makes a lovely, light Summer lunch.
