Palak Paneer
One of my favorite, quick, easy to make curries. Unfortunately this one isn't one I can easily double the recipe on. The sheer volume of the uncooked spinach fills up the instant pot.
🥘 Ingredients
- garlic 6 cloves
- fresh ginger 2 tsp
- jalapeño 1
- large yellow onion 1
- ground cumin 2 tsp
- cayenne pepper ½ tsp
- garam masala 2 tsp
- turmeric 1 tsp
- salt 1 tsp
- peanut oil 2 tsp
- water ½ cup
- tomatoes 1 can
- spinach 1 pound
- paneer 1 ½ cups
🍳 Cookware
- bowl
- bowl
- instant pot

1Chop garlic , fresh ginger , and deseeded jalapeño and put in a bowl

2Chop large yellow onion and place in a bowl with ground cumin , cayenne pepper , @ garam masala , turmeric and salt

3Select sauté on the instant pot

4Add peanut oil and heat until it is shimmering

5Add the bowl of garlic, ginger, jalapeño and cook for about one minute

6Add the bowl of onion, cumin, cayenne garam masala.

7Add water and drained tomatoes and stir

8Add spinach and mix as best you can. This gets a bit unwieldy. It is okay if it isn't well mixed.

9Cook on manual/high pressure for 4 minutes . Once it is done quick release

10While this is cooking chop paneer in small cubes

11When the cooking is finished purée until smooth

12Mix in paneer and serve
