Cream of Asparagus
One of my favorite spring recipes. Asparagus grows wild where my spouse walks the dogs. After a long walk they will come back with enough for us to make a wonderful, fresh dinner.
🥘 Ingredients
- asparagus 2 pounds
- onion 1 large
- butter 3 tablespoons butter
- chicken broth 5 cups
- crème fraîche 1/2 cup
- lemon juice 1/4 teaspoon
- parmesan
🍳 Cookware
- large pot
- immersion blender

1Cut asparagus in half inch pieces. Optionally reserve some tips as garnish.

2Chop onion .

3Cook the onion in butter in a large pot over medium low heat while stirring until soft.

4Add asparagus pieces and salt and pepper to taste.

5Cook while stirring for 5 minutes.

6Add chicken broth .

7Simmer covered until asparagus is very tender. Approximately 15-20 minutes.

8Using an immersion blender to blend until smooth.

9Add crème fraîche . Substituting heavy cream is just fine.

10Add more broth to get soup to desired consistency.

11Mix in lemon juice .

12Apply flakes of parmesan on top and, optionally, asparagus tips as garnish.
