- water 1 tbsp
- corn starch 1 tbsp
- eggs 3 each
- stock 2 cups

1combine lemon juice , water , and corn starch to make a slurry.

2Let eggs come to room temperature. Whisk eggs, slowly adding the lemon slurry. When slurry is fully incorporated, add to room temperature stock . Bring up to simmering heat, frequently stirring, until sauce reaches desired thickness.
