  • red lentils 5 cups
  • onion 2 medium
  • garlic 3 cloves
  • coconut oil 3 tbsp
  • black mustard seeds 1 tbsp
  • fenugreek 1@tsp
  • turmeric 1 tbsp
  • cumin seed 1 tsp
  • coriander seed 1 tbsp
  • tomato paste 2 tbsp
  • chicken stock
  • lemon juice 1 lemon
  • salt
  • pepper

    Soak red lentils overnight.

    Sweat onion and minced garlic in coconut oil and add black mustard seeds , fenugreek , turmeric , cumin seed , and coriander seed .

    Add strained and rinsed lentils, tomato paste and chicken stock to cover. Simmer for an hour.

    Add lemon juice and season with salt and pepper to taste.
