Toast your bread using your preferred method. Prep the ingredients. Chickpeas: Drain and rinse. Artichoke hearts and parsley: Roughly chop. Cucumber(s): Chop. Pickled onions: Finely chop. Olives (optional): If using, halve. Make the salad. Add the chickpeas to a medium bowl. Add the artichoke hearts, cucumber, Kalamata olives (if using), pepperoncini, pickled red onions, and parsley. Add the oil, Italian seasoning, and black pepper to taste. Toss everything together. Gently fold in the vegan feta crumbles. Use a light hand so the feta doesn't break down. Taste, adding a pinch of salt if needed. Divide into bowls and serve with toasted bread. > If you don’t have Italian seasoning, season the chickpeas with 1/2 tsp dried oregano, 1/4 tsp dried basil, 1/8 tsp dried thyme, and 1/8 tsp dried rosemary. > Storage: Store the assembled chickpea salad in the fridge for up to 3 days.
