Optional: If using radishes, thinly slice them into half moons (or rounds). TIP: Use a mandoline while wearing a safety glove to make this faster and thinly slice into rounds. If you are making this salad again this week, feel free to slice all of the radishes the first time you make this salad, storing the extra in a ziploc bag or airtight container in the fridge for up to 3 days. In a serving bowl, combine the romaine, radishes if using, bell pepper, and red onion. If the Jalapeño-Basil Dressing is too thick or needs reviving, add in a few squeezes of lemon juice and/or a drizzle of olive oil and whisk well to combine. Spoon 5 tbsp of dressing on the salad, and toss to coat with tongs. If desired, spoon a bit more dressing on the salad. Sprinkle the salad with the sunflower seeds and season to taste with salt and pepper. > If your sunflower seeds are raw, toast them first for the best flavor. Heat a frying pan over medium heat. After a minute or two, add the seeds and toast for 3 to 5 minutes, shaking the pan occasionally, until golden brown. Or, add to a rimmed sheet pan and toast in a 350ºF / 175ºC oven for 8 to 10 minutes. > Storage: This salad is best fresh; only make as much as you can eat. > Nutrition boost: Add on chopped cucumber, sliced jicama, or shredded cabbage for more veggie action.
