Add the cabbage to a large bowl. Add 1 tsp of the vinegar and a pinch of salt. Massage the cabbage with your hands for ~{30-60%seconds} to soften. Finely chop the cucumber. Chop the herbs or tear them into pieces with your hands. If using nuts, chop them (if using seeds, leave them whole). Add the cucumber, romaine, and herbs to the cabbage. Drizzle on 1 tbsp olive oil, 1 tbsp tahini, and 2 tsp vinegar. Toss with tongs or your hands to combine. Taste, adding more olive oil or tahini for more richness. For more tang, add a bit more vinegar. Fold in the nuts or seeds and season to taste with salt and pepper. > If your nuts/seeds are raw, toast them first for the best flavor. Heat a frying pan over medium heat. After a minute or two, add the nuts/seeds and toast for 3 to 5 minutes, shaking the pan occasionally, until golden brown. Or, add to a rimmed sheet pan and toast in a 350ºF / 175ºC oven for 7 to 10 minutes. > Storage: Store the cabbage (unmassaged) and romaine (undressed) in the fridge for up to 5 days. Chop your cucumber and herbs fresh, then dress the salad with oil, vinegar, and tahini; top with nuts/seeds right before serving. > Nutrition boost: For a sweet spin, add on any dried fruit (such as dried tart cherries), sliced peaches, or sliced tart apples. To keep it savory, add on diced tomatoes, diced bell peppers, shredded carrots, or any leftover diced red onion. > Shortcut: Skip the fresh herbs or cucumber in this salad.
