Add in the rice, salt, and olive oil. For 2 1/2 cup brown rice: Add 4 1/3 cup water to a large saucepan. Add in the rice, salt, and olive oil. Bring to a boil, then reduce the heat to low and cover. Gently simmer for ~{40-45%minutes}, or until the water is absorbed and the rice is tender but a little toothsome. It will cook a bit more in the next step. Take off the heat, but keep covered. Steam for ~{10%minutes}. Fluff the rice with a fork. If you have time, transfer the rice to a sheet pan or silpat mat (or two) and spread it out to cool. Label and store the rice in an extra large airtight container or divide in half (about 4 cup each) and store in two airtight containers in the fridge for 4 to 5 days. = Instant Pot Instructions = For 1 1/2 cup brown rice: Add the rice and 1 3/4 cup water to the Instant Pot. For 2 1/2 cup brown rice: Add the rice and 3 cup water to the Instant Pot. Add the salt and olive oil and stir. Seal the machine and select the Pressure Cook setting at high pressure. Cook for ~{12%minutes} (or 15 to 20 minutes for softer rice). Allow a natural pressure release for ~{10%minutes}.
