For the for serving (optional, see note 2):: @scoop plant-based protein powder of choice{6%tbsp}, @nut butter of choice{3%tbsp}, @fresh berries or fruit of choice{3%handful}. In a large bowl, whisk together the yogurt and milk until well combined. Add the oats, chia seeds, sugar, cinnamon, salt, vanilla, and almond extract. Whisk or stir until the oats are well incorporated and everything is evenly combined. Taste, adding more coconut sugar if desired (see Note 1). Store in a sealed large jar or container, or divide between three small jars. Chill overnight (or for at least 1 hour) and store in the fridge for up to 5 days. Optional: When ready to serve, prep your toppings and add-ins. If you are using protein powder, add ½ scoop (for one serving) to a bowl and drizzle in enough filtered water to make a thick and creamy slurry. Now add in your one serving of overnight oats and stir well to combine, adding more milk (or water) as needed if it’s too thick. If desired, top each serving with ~1 tablespoon (16g) nut butter and a handful of berries. > Using 1 tbsp coconut sugar makes for very mildly sweet oats. If you are planning to stir in protein powder that has some sweetener, I recommend not using more sugar. > These amounts are for 3 servings and will add even more protein (with protein powder and peanut butter, one serving yields 37g protein!). See step 3 for the amounts to use when making just one serving. > Storage: The overnight oats will stay good in the fridge for up to 5 days. Prepare your toppings and add-ins (if desired), and assemble as listed in step 3 right before enjoying. > Nutrition boost: For more plants, mix ground flaxseeds or hemp seeds into the oats.
