Add @neutral oil{1%tbsp} and mix in @spring onion{1%stalk, white part only}, @ginger{1%tbsp, minced}, and @garlic{3%cloves, chopped} and stir-fry until browned and fragrant, ~{6%minutes}. In a bowl, whisk together @sesame paste{5%tbsp}, @chilli crisp{2%tbsp}, @sesame oil{0.5%tbsp}, @light soy sauce{0.5%tbsp}, @sugar{1%tsp}, and @black vinegar{1%tsp, optional}. Whisk in @noodle water{4.5%tbsp} to loosen; set aside. Meanwhile, cook @noodles{150%g, uncooked} in salted water until al dente, then drain. Boil @broccolini{4%stalks, boiled} until tender, then drain. In a large bowl, toss the drained noodles with the tofu and its sauce; add the broccoli and toss again. Garnish with @spring onion greens{1%tbsp, chopped} and @crushed peanuts{2%tbsp}. Drizzle @chili oil{1%tbsp} over the top and serve.
