Smash @garlic{2%cloves // Smashed and then sliced} with the flat of a knive and then slice it. On a hot wok on high heat, add @lard{20%gr // or vegetable oil}. Add garlic, @ginger{1%thumb // minced}, @spring onions{2%stalks // sliced}, @dried red chilies{10} and @Sichuan green peppercorns{1%tbsp} and fry until aroma comes out. Add @light soy sauce{1%tbsp} and @bean sprouts{400%gr} and fry for 15 seconds. The goal is not to cook them through, just remove the rawness. Add the prepared sauce and stir well. Serve immediately with steamed white rice and other hot dihes.
