Create a simple syrup using @water{2%dl} and @sugar{1%dl} bring to a boil and ensure all sugar has completely dissolved before bringing off the heat. Then add @lime zest{1} and @mint leaves{0.5%dl}. Let steep for ~{1%hour}.
When syrup has cooled to around 50 degrees C add @honey{1%dl} and dissolve in syrup.
When syrup has reached room temperature place it in fridge until around 4 degrees C.
After syrup has cooled add @lime juice{2%dl} and @soda water{3%dl} along with @light rum{2%tbsp}. Then churn according to #ice cream maker{} instructions.
